Bianc Restaurant Hamburg
Italian chef Matteo Ferrantino brings the essence of southern Europe to Hamburg with a fresh and inventive approach. Having led the kitchen at the two-star Vila Joya in Albufeira alongside Dieter Koschina, he now presents his culinary vision at Bianc.
Guests can choose between two thoughtfully crafted tasting menus, “Emotion” and the vegetarian “Garden,” featuring premium ingredients and imaginative flavor combinations.
From vibrant amuse-bouches to delicate petits fours, each dish tells a story – think “Red prawn with onion, cantaloupe, and pata negra” or “Azores squid with egg yolk, guanciale, and Pecorino.
” The stylish interior, designed by architect Julia Erdmann, evokes the charm of an Italian piazza, complete with a view into the kitchen. The presentation of hors d’oeuvres from the kitchen pass adds a playful touch to the dining experience.
