FIEF – Fait Ici En France Restaurant Paris
FIEF is both a name and a statement. It stands for Fait Ici En France—made entirely in France—and reflects the philosophy of its chef, Victor Mercier, who came to national attention on Top Chef France in 2018.
His kitchen works exclusively with French ingredients, sourced from every corner of the country. From Sichuan pepper grown in Gers and peanuts from Soustons to pigeon from Poitou, fish from Brittany, yuzu from Montpellier, and even boldly reimagined elements like French-style satay or Burgundy miso, every detail stays true to this vision.
Desserts follow the same path, with ice creams scented with sweet clover instead of classic vanilla. Guided by this strict yet creative approach, the chef composes expressive plates supported by intense, confident sauces.
Sitting at the counter allows guests to experience the cooking up close, exchange a few words with the team, and gain a deeper understanding of Victor Mercier’s culinary thinking and the passion behind each dish.
